What are the Requirements to Become a Baker?

Becoming a baker does not necessary entail earning certification from a higher learning institution. Instead, learning to bake pies, breads, cakes, cookies and special pastries as an apprentice can be accomplished prior to obtaining licensing as a master baker. However, vocational colleges typically offer culinary programs that include bakery instruction as well as other subjects related to being a professional chef who works for high-end restaurants, cruise ships and hotels.

Educational Requirements

Learning the art of making bakery items can be done by working as an apprentice to an experienced baker. For this reason, it may not be necessary for someone to have more formal educational training, unless they plan to work in a professional capacity as a baker in the future.

Subjects in a Bakery Program
  • Operating and maintaining bakery equipment
  • Sanitation methods
  • Chemical reactions associated with bakery ingredients
  • How to make French, German and English pastries, pies, cookies, cakes and other items
  • Cake and pastry techniques and designs
  • Different types of flours and flavorings used in bakery items
  • Food-borne illnesses
Skills You Need To Succeed as a Baker

  • Math skills involving fractions, decimals and knowledge of metric system
  • Creativity, ingenuity and a flair for developing and decorating event-specific bakery items (wedding cakes, birthday cakes, etc.)
  • Able to stand for extended periods and occasionally lift heavy objects
  • Mechanical insight involving the operation of large blenders, multi-use stoves and ovens and other bakery equipment
  • Attention to detail, especially in regards to proper food storage, handling and sanitation procedures
  • Business management acumen if you plan to open a bakery business
Baker's Certifications

After completing a culinary/baking program at a vocational school or community college, students may apply for certification from the Retail Bakers of America (RBA). The RBA offers several different types of certification, including Certified Journey Baker, Certified Baker and Certified Master Baker. This organization also has a Certified Decorator program that applies to bakers who primarily make cakes and pastries. In addition, the Retail Bakers of America reports that bakers with one or more of these certifications experience better employment prospects and higher income.
